Danny Boy
With no money in the bank, we've been eating oatmeal and cheese sandwiches all week, but it hasn’t been as boring as you might think. I start the day by cooking Danny Boy steel cut oatmeal topped with a pastured poached egg. Mixing the yolk into the still hot oatmeal makes it even richer and creamier.

About the Video:
Here is a scene from 'Because of Him' (1945). Deanna Durbin, a stage-struck waitress who tricks a famous actor, played by Charles Laughton, into giving her his autograph without him knowing he's signing a 'Letter of Introduction'. Using this letter, she fools people into believing Laughton wants her as his leading lady in his next play. He soon rumbles her little scheme however and, finding her lacking in any acting experience, tells her she'll be ready to appear on the stage in a few years time. While he phones for a cab to take her home, Deanna breaks into song with "Danny Boy," causing Laughton to relent and make her his leading lady after all. This was their second film together, their first having been "It Started with Eve" in 1941.

One For The Road

HERE'S HOW TO MAKE IT
I started with some butternut squash that Kathy had baked for lunch just yesterday.
Next, I sauteed half of a large white onion with a bit of parsley in two tablespoons of Queen Creek organic olive oil. After about two minutes on medium heat I mixed the onion & parsley with two cups of mashed squash adding just enough Organic Valley Whole Milk to bring it to a soup consistency stirring constantly for about five minutes.
Near the end of cooking, to make it even healthier, I added a bit of chopped fresh kale.
Season to taste with sea salt and freshly ground black pepper. Oh So Good!

Stagecoach Coffee
HOW IT'S MADE
1. Have Sis stop by Starbucks and get a Ceramic Arizona Coffee Cup like the one Sara gave to me.
2. Fill the cup with Organic Valley Grass-fed Milk.
3. Pretend you milked the cow that filled the cup.

4. Heat the milk in the Microwave for about 3 minutes or until you see the yellow fat appear on the top.
5. Add two tablespoons of Nescafe instant coffee.

6. Have Sis whip up a little Heavy Whipping Cream with a bit of organic sugar.
7. Add the Whipped Cream to top until the cup begins to overflow and then add two tablespoons more.

The Recovery Sandwich
There is hardly anything more nourishing or satisfying than The Original Mayo Recovery Sandwich. It is a modified version of the hot peanut butter on toast that I would make for patients during my RN days at the Mayo Clinic hospital in Phoenix, Arizona - hence the name!
HERE'S HOW IT'S DONE:
Cut one slice of homemade whole wheat bread and toast it. (Dave's whole wheat bread from Costco or Whole Foods is a worthy substitute).
Heat up 3 or 4 tablespoons of Organic Tahini in the microwave for about 15 or 20 seconds and pour onto the toasted bread.
Top with Lundberg's Organic Brown Rice Syrup.
Have a napkin ready to wipe the elbows when finished. 😇
Enjoy with warm cup of Grass-fed Organic Valley Milk and a Corgi!

Best Ever Oatmeal
When I was a little boy my mom made cooked oatmeal for me every day and I never ever tired of it. Here is how she made it.
POT OF OATMEAL
For four servings, in a medium saucepan bring 3 1/4 cups of water and 1/4 teaspoon of salt to boiling. Stir in 2 cups of rolled organic oats (old-fashioned). Reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally. Remove pan from the heat and dish up. Top with organic half and half or heavy whipping cream. It will keep you from blowing away.
A secret ingredient for Mara! Put a pad of Irish Kerrygold butter right in the middle.
